Honey

Honey

One of the great things about being a small scale honey producer is that our honey can be harvested by hand and doesn’t need to be all the same. Our honey is harvested from hives at Trelelyydn farm and around St Davids peninsular surrounded by acres of coastal flora and traditional hedgerows.

When it is time to harvest, super frames are spun in an extractor and the raw honey is passed through a sieve to remove the larger bits of wax and debris before being sealed in jars.

Minimizing the amount of processing the honey has to go through preserves a lot of the delicate flavors the honey has and ensures it tastes better on your toast!

The flora on the St Davids peninsular changes quite dramatically throughout season and as the forage changes the honey takes on different flavors and characteristics. To make the most of the huge floral diversity we try and extract the at different times of the year to try and capture some of the unique flavors of the forage.
